A home experiment for the night! This is an attempt at my godmother's recipe for goulasch, which I admittedly haven't attempted in a good long while. I'm a big fan of miscellaneous pasta dishes when you're running low on things (today is egg noodles and rainbow rotini), and this batch is made with some chicken (shredded canned kind -- good pantry staple!), a doctored red gravy/spaghetti sauce (I'll never reveal my secrets), sweet corn and diced onions. Garnish with red pepper flakes (if desired) and an Italian blend of cheese (mozza, asiago and... Provolone, I think?). I'm missing my fresh bread and gelato for the ideal, but I'll live. It's simple, hot, filling, and more importantly, CHEAP! And this is definitely one of those recipes that cures nicely the second or third day.

I'm visiting the loverlies!!! And she cook-ded for me-z! This is a rice bowl with black beans, rice, chorizo, mexi cheeses, fresh tomatoes, avocado, chives and jalapeno. Hot damn. @isthisgoingtobeanissue is a lovely cook!
FOOD. Trying not to cry because this is the last of my tortillas. Homemade quesadillas made with buttered tortillas, shredded three-cheese blend, and diced onions. Again, a simple dish that's warm and hearty and filling and HOT, perfect for a chill spring evening. Great to have with a spot of medium salsa, simple and cheap. Makes you feel accomplished while you're actually having a glorified grilled cheese sammich for dinner. BUT SOUTHWEST.
FROM scratch, black bean chili! This shit is ON FLEEK!
...God, I hope that saying doesn't keep, it's so awful. But I did really love this experiment. I made chili with a can of chili, a can of black beans, my usual mess of spices and jam and what-the-hell else, and then popped it into a bowl, some cheese on top, and some tortilla chips. After a long day that wasn't necessarily so great, just having the spoons to cook something from scratch, fool around, and then have a hot and hearty comfort food dinner to be proud of. Plus, the beans are a nice protein boost, and it stretches one can of chili into a nice, full pot, and they're also a lot less expensive than more chili, hehehe. Also, I just really love black beans. I really, really do. I'm trying to embrace this southwest aesthetic, don't judge me. One thing I've really bought into here in the southwest, is the CUISINE. Sonoran dogs are a bit beyond me with my kitchen atm (BUT OH GOD HOW I ADORE THEM), but the simple treat of a well-toasted, crispy and gooey quesadilla in the toaster oven is just... EURGH. It's one of those little things that just make you feel all happy on the inside. I love it! It's legit one of my favorite dinners to make. AND LOOK AT THAT GORGEOUS CRUST. You know you want to steal a slice. These are made with the mexican cheese blend and a little onion, then served with salsa on the side. It's honestly a really cheap, fairly filling, and not even necessarily too bad for you meal!
Now that is beautiful... A colorful part of this complete breakfast! [Not shown: already devoured banana (chef's snack).] Egg scramble with red bell peppers and anaheim, black pepper and garlic salt. On the side, toast for a texture contrast. And of course, my prerequisite caffeine. Maybe one day I'll be sponsored by Dr. Pepper and live happily ever after. That would be nice.
Okay, confession: this is not so much a Home Experiment as it is a humble brag. The loverly made sammiches!!! We has a panini press! Can turn your average sammy into something extra fancy.
Sometimes you know what you want, and sometimes what you want is waffles drowned in syrup and a couple eggs on the side in the middle of the night. I've just come to accept this is a thing in my life, and try to keep waffles in the freezer for just such a reason.
Ahhh pizza. I love pizza. You can't go wrong with pizza. I don't have a lot of money to be ordering in much, so I'm a big fan of frozen pies I can take home and bake up when I'm having a low energy, mental health day. This one had a nice, fluffy crust, good amount of toppings... My biggest thing was making sure the pepperoni is spread evenly, but that's the kind of thing to poke at while it's frozen when you put it into the oven. I like this one -- it was cheap, filling, and satisfied the need juuuuust fine. And it was only $4!!!
I'm not even going to lie to you and call this a 'home experiment', because it is pretty straight forward buffalo chicken. The star here is Frank's Red Hot buffalo sauce, which is a gorram phenomenon out here in Tucson. Like, it's freaking everywhere.
